School lunch lessons for fabulous fun this fall

With children going back to school this fall it is important to keep growing kids happy and healthy.

    The nutritionists at Children’s Mercy Hospitals and Clinics offer these suggestions to keep your child’s lunch lively this school term.

  • Wrap sandwiches (using tortillas or flat bread) would be a good lunch using any lean or fat free meat and fat free or 2% cheese slices, shredded lettuce &/or shredded carrots with some low fat dressing. You can do the same thing with peanut butter and jelly. Be creative.
  • Use cookie cutters to make fun shapes out of sandwiches. For example, make stars for the 4th of July, Christmas trees or other holiday shapes in December, hearts for Valentines Day, and teddy bears anytime, etc.
  • Make your own healthy snack mix using your own favorites like goldfish, pretzel sticks, chex/crispix cereal, raisins, etc.
  • Send fun fruits and vegetables like ants on a log using celery sticks filled with fat free or light cream cheese or peanut butter and raisins on top (the ants) or send dips for kids to dip their fruit or vegetables.
  • Make open face sandwiches and use fruit and vegetables to decorate. For example: bananas, blueberries, or raisins for eyes, apple slices or fruit lined up for the mouth, shredded carrots or celery curls for the hair, anything for the nose - pecan, strawberry half, or a raspberry.
